Ingredients :

2 Baigan (brinjal) cut into 4 pieces

1 tomatoes
3 red chilli
1/2 teaspoon turmeric
4 spoon mustard oil
1\2 tsp punch-phutana
½ teaspoon cumin seeds & coriander seeds
Salt to taste
2 drumstick cut into small pieces
1 potato cut into 1\4 pieces
Mustard paste( grind 3 tsp mustard+3 red chilli+5 clove garlic + ½ teaspoon cumin seeds & coriander seeds )
Fresh coriander leaves

Ingredients :

1/2 kg Chhatu (mushrooms) cut into pieces
1 small Aalu (patato) cut into small cubes
2 Dry Ambula (mango) slices soaked in water
1 tea spoon panch phoran
2 tea spoon of Sorisa (mustard seeds)
1 tea spoon of jeera seeds
8-9 cloves of Rasuna (garlic)
3/4 tea spoon of turmeric powder
2 tea spoon Oil
1/2 tea spoon of red chilli powder
1-2 green chillies
salt to taste

Recipe : Hot chilli in vinegar
Ingredients :

Red hot chillies about 100 gms. Different colored chillies  will add to the variety. Wash the chillies well in running water and remove the stalks.In a glass bottle add 250 ml of white vinegar and add one tea spoon of salt ( non iodized) and two  teaspoons of sugar and mix well. Add half tea spoon of fennel, half tea spoon of kala jeera half tea spoon of ajwain and half tea spoon of jeera  to this mix. Cut the chillies into different shapes and add to the mix. Leave the mix for 2-3 days. While making salad or chat add a tea spoon of the vinegar in the top to a bowl of curd and add other ingredients as required. When the vinegar is over, the leftover chillies can be added to lemon or mango pickle.
